Homemade Pancake Premix

I’ve been making my own pancake mix 🥞

With less time on my hands, I need to be more efficient. I hate breakfast - but my husband loves it… so some weekends I make breakfast.

Premix from the store is just sketchy after deep diving what’s available on the shelves… so I make my own. Saves time, money (maybe?) and it’s simple and easy.

Here’s what I’ve been doing:

In a large mason jar (or glass container) add:

  • 6 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tbsp baking powder
  • 2 tsp baking soda
  • 2 tsp salt
  • 1/2 cup cornstarch

Add everything to the jar and shake. Store in a cool, dry place for up to 3 months.

Now to make pancakes 🥞 this makes about 5 pancakes.

  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • tbsp melted butter
  • 1 tsp vanilla extract (optional)

Whisk it all together until just combined - some small lumps are fine. Let the batter rest for about 10 minutes.

Give the rested batter one quick mix and then plop about ¼ cup of batter onto a hot, greased skillet. Cook until bubbles form on the surface and the edges begin to look cooked (about 3 minutes). Flip and cook for another 2 minutes, until they’re nice and browned.

Perfect for camping, hunt camp and a busy home.
