Wild Turkey Slow Cooker White Chili
Equipment
- 1 Slow Cooker
Ingredients
- 2 lbs turkey 1 full turkey breast or 2 lbs of ground turkey
- 500 ml chicken broth
- 2 540 ml cans white kidney beans drained
- 1 113 ml can green chilis diced
- 1 small onion diced
- 5 cloves garlic diced
- 1 cup corn
- 1 tbsp Italian seasoning
- 1 tbsp paprika
- 1/2 tbsp chilie powder
- 1 cup plain greek yogurt
- 1/2 cup mozzarella cheese shredded
- 1/2 cup parmesan cheese shredded
- salt and pepper to taste
- extra cheese to top
Instructions
- If you are using a full turkey breast, lightly run the breast with olive oil, salt and pepper before adding it to your slow cooker. If you are using ground turkey, first brown the ground turkey in a pan before adding it to your slow cooker.
- To the slow cooker, with the turkey, add your chicken broth, chilies, beans, onion, garlic, corn, Italian seasoning, paprika, chilie powder, salt and pepper. Mix well.
- Cook on low for 6 hours.
- Add the greek yogurt and cheeses. Mix well. Turn the slow cooker up to HIGH and cover. Cook for 15 minutes.
- Stir again, as moisture will settle on top. Cook for another 15 minutes uncovered.
- Service with cheese on top if desired and enjoy!
