Wild Goose Goulash

This hearty wild goose goulash made of Canada or Snow Goose Sausage, potatoes, corn, peppers, onion and delicious warm seasoning. It has a breakfast vibe, but is great for any other meal or part of the day. It's one of those meals you can make ahead and heat up when you need something warm and nutritious, lets say while out hunting or camping. It's also that feel good meal for yourself or the family, or a meal that is easy to make in bulk as a good dinner or breakfast for the hunt camp.

Ingredients

  • 1 lb of canada or snow goose (or any wild game) breakfast sausage - I always use my Hot Maple Breakfast blend
  • 1 small onion - diced
  • 1 green pepper - diced
  • 4 medium potatoes - cubed and soaked
  • 2 tsp basil
  • 2 tsp oregano
  • 2 tsp thyme
  • 2 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 1/2 cups corn - fresh or frozen

Cut your potatoes into 1/2'' pieces. I do not skin the potatoes, but you can if you want. Soak these potato pieces in cold water for 20 minutes before adding them to your skillet to remove any extra starch and stop them from sticking too much or making the goulash too sticky.

Crumble and brown the wild game breakfast sausages in a hot skillet (remove your sausage from the casing if you're not using sausage rounds). My favourite is the cast iron skillet, it cooks this recipe so well. As for the wild game sausage, I like using my super easy Hot Maple Breakfast sausage recipe, but the LEM Backwood seasoning is a very good blend as well. We keep both in our freezer.

Once the goose or wild game sausage is browned, remove about 75% of the grease that will come out of the sausage. You can use a paper towel to do this, some do advice against this practice though.

Side note: I have used this recipe with Snow Goose and Canada Goose sausage. I taste no real difference in the two, but maybe tbat's just me.

Add the cubed, soaked and rinsed potatoes and all of the seasoning, basil, oregano, thyme, onion powder, salt and pepper. Mix well and let cook for 10 minutes. If you're using a cast iron skillet, you will know that you should turn the head down to medium low to avoid the potatoes from burning.

Add onion, green pepper and corn and mix well. Cook over medium heat (medium low for hot pans like cast iron), stirring and flipping every few minutes to ensure even cooking and taste distribution. Cook until potatoes are tender. Total cook time depends on how large you cut your potatoes, but this should take about 20 minutes.
