"Almost Skunked" Goose on a Bun
Hunters know that some waterfowl hunts are more successful than others. Some days we hit our limit before the coffee is finished, other days you don't get a chance to harvest a single thing. This weekend was almost the latter.
If you happen to run into a situation where you "almost get skunked" and only harvest one bird, this super quick and very easy recipe is just right for you (and your friends or family!).
My crockpot or slow cooker is fabulous for wild game recipes. It's so simple to just prepare, plug in and go about my busy day working or hunting.

Ingredients:
- 1 goose (2 breasts and 2 thighs)
- 1/4 cup brown sugar
- 1/4 cup red wine
- 1/8 cup ketchup
- 1/8 cup BBQ sauce
- 1/8 cup Worcestershire sauce
- 1/8 cup soy sauce
- 1 tablespoon Cajun seasoning
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 2 teaspoons paprika
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup cornstarch mixed with 1/8 cup warm water
- Buns for serving
- Shredded cheese for garnish (optional)
Instructions:
Prepare the Goose:
Start by cleaning and patting dry the goose breasts and thighs.
You can leave the bone in the thigh for added flavor. Remove it later as the meat cooks and becomes tender.
Prepare the Sauce:
In a mixing bowl, combine the brown sugar, red wine, ketchup, BBQ sauce, Worcestershire sauce, soy sauce, Cajun seasoning, onion powder, garlic powder, paprika, dried basil, dried oregano, salt, and pepper. Mix until all ingredients are well incorporated.
Combine Goose and Sauce:
Place the cleaned goose pieces into your slow cooker or crock pot.
Pour the sauce mixture over the goose to ensure it's well-coated.
Slow Cooking:
Set your slow cooker to medium heat.
Cover the slow cooker and let it cook for at least 8 hours or until the goose meat easily falls apart with a fork. Slow cooking will make the meat tender and flavorful.
This should be at least 8 hours.
Shred the Meat:
Once the goose is fully cooked, carefully remove any bones, fat, and tendons from the meat.
Use two forks to shred the meat into smaller pieces. The meat should be succulent and flavorful from the slow cooking process.
Thicken the Sauce:
In a separate bowl, mix the cornstarch with warm water until it forms a smooth slurry.
Add the cornstarch mixture to the slow cooker, stirring it into the sauce and meat.
Finish the Dish:
Turn your slow cooker to high heat, leaving the cover off.
Let the mixture simmer for about 10 minutes, stirring occasionally. This will help the sauce thicken and cling to the shredded goose.
Assemble the Sandwich:
Toast your buns lightly if desired.
Spoon the tender goose and sauce onto the bottom half of each bun.
Optionally, sprinkle shredded cheese on top for added flavor.
Serve and Enjoy:
Place the top bun on the meat and sauce.

Equipment
- 1 Slow Cooker
Ingredients
- 1 goose 2 breasts - 2 thighs
- 1/4 cup brown sugar
- 1/4 cup red wine
- 1/8 cup ketchup
- 1/8 cup BBQ sauce
- 1/8 cup Worcestershire
- 1/8 cup soy sauce
- 1 tbsp Cajun seasoning
- 2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika
- 1 tsp basil
- 1 tsp oregano
- salt & pepper to taste preference
- 1/4 cup corn starch mixed with 1/8 cup warm water
Instructions
- Mix all ingredients except for the corn starch and add to slow cooker or crock pot.
- Add your goose - both thighs and both breasts skinned. You can leave the bone in the thigh and remove it as the meat cooks and falls off the bone.
- Cook on medium heat for at least 8 hours, or until meat falls apart easily with a fork.
- Add cornstarch and water mixture. Mix together.
- Turn your slow cooker to high, let sit with the cover off for 10 minutes, stirring often.
- Add to a bun with shredded cheese and ENJOY!
