Rhubarb Simple Syrup
This is such a delicious way to use your rhubarb, I know there’s usually a lot of it. This simple syrup adds that seasonal summer rhubarb freshness to plenty of cocktails like rhubarb gin smash, rhubarb margaritas and rhubarb gin and tonics.

- 2 cups chopped rhubarb
- 1.5 cups cane sugar
- 1 cup water
Bring all ingredients to a boil in a saucepan. Boil for 8 minutes. Let cool slightly. Strain through cheesecloth or a coffee filter into a jar.
Keep in the fridge for up to 7 weeks to add to delicious drinks and cocktails rhubarb gin smash, rhubarb margaritas and rhubarb gin and tonic.
