Goose Enchiladas
Filling:
- 1lb browned/cooked ground goose
- 1 cup salsa
- ¾ cups queso
- ½ cup shredded cheese
- 1 tbsp paprika
- 1 tbsp chilli powder
- 1 tsp garlic powder
- Diced onion and garlic
Enchiladas sauce for base and topping
- 3 tbsp butter
- 3 tbsp flour
- 1 cup sour cream
- 2 cups shredded cheese (mozzarella is best)
- 1 – 2 cups chicken broth (depending on thickeners)
Melt butter in saucepan, whisk in flour. Once combined like paste, add rest of ingredient and bring to a simmer.
- Large flour tortillas

Preheat oven to 350. Cook for 25 minutes.
Pour small amount of sauce on bottom of 9x12 baking pan. Roll tortillas with filling. Place in pan. Pour remaining sauce on top. Add extra shredded cheese on top if you’d like. Bake for 25 minutes.
